As part of our growth, we are introducing Calo – Build Your Own (BYO), a live, guest-facing food concept inspired by fast-casual and customizable food brands. This concept focuses on freshly built, customizable bowls and wraps prepared on the spot, while maintaining Calo’s quality, nutrition, and food safety standards.
Role Overview
We are looking for a Line Cook to join our Calo – Build Your Own (BYO) concept. This role is ideal for candidates with experience in fast-casual restaurants, live food stations, or assembly-line service environments who are comfortable interacting with guests.
The Line Cook plays a key role in delivering Calo’s build-your-own bowls and wraps experience by serving guests, assembling orders, and maintaining food quality and safety standards. The role requires speed, accuracy, attention to detail, and a customer-focused approach in a high-volume service environment.
Main Responsibilities
Prepare and assemble bowls and wraps in front of customers according to customer selections and Calo BYO standards
Serve guests directly from the service line while maintaining friendly and professional customer interaction
Ensure fast, accurate, and consistent service during busy periods
Follow standard recipes, portion sizes, and presentation guidelines
Maintain high standards of food quality, freshness, and portion control
Set up the service line before shifts and ensure all ingredients are properly stocked and ready for service
Refill ingredients and communicate stock needs to the kitchen team
Guide customers through menu items, toppings, and customization options
Answer basic questions related to ingredients, allergens, and dietary preferences
Follow food safety, hygiene, and sanitation standards at all times
Monitor holding temperatures and ensure compliance with food safety guidelines
Keep the service line clean, organized, and efficient throughout the shift
Work closely with kitchen and service teams to maintain smooth operations
Support training, tastings, and new menu launches when required
Maintain a positive, professional attitude and contribute to a collaborative team environment
Ideal Candidate
Qualifications
Previous experience as a Line Cook, Line Server, or Service Line Staff in a fast-casual or quick-service restaurant
Experience with assembly-line or build-your-own food concepts (e.g. Chipotle, Sweetgreen, Subway, Pret, Joe & The Juice, hotel live stations)
Experience working in a customer-facing environment
Hands-on experience in food preparation, portioning, and food handling
Good communication skills and ability to work in a fast-paced environment
Basic knowledge of food safety and hygiene practices
Currently based in KSA
Comfortable communicating in English (Arabic is a plus)
Knowledge & Competencies
Understanding of speed, accuracy, and efficiency in high-volume service environments
Knowledge of food safety, hygiene, and temperature control standards
Ability to follow SOPs, recipes, and portion standards consistently
Ability to handle repetitive tasks while maintaining focus and quality
Good teamwork and communication skills
